What do you do when Edna the Emu gives you eggs? You make lemon curd of course. Or rather you get your favourite private chef to make it. But as Zoe The Epicurean Sailor found, it was easier said than done…

‘Not your standard ‘crack on the side of the bowl’ method of opening… I even considered using my drill initially but in the end decided a hefty karate chop with the back of my heavy old chef’s knife would do the trick. Still took some doing to prise the shell apart without risking breaking the yolk though.
A quick calculation to work out the equivalent in chicken egg yolk so I could upsize the recipe (12 medium yolks = 216g), then stuck the whole curd mixture in my sous vide to save my wrist the pain of solid whisking for hours!’
